Blend a classic mojito and you get Frohito.  This tropical cocktail is by Jeff “Beachbum” Berry and has a sweet and citrus flavor.  It’s difficult to make because you need to prepare mint syrup as well.  This recipe would yield few glasses.

  • 4 ounce of light Virgin Island rum
  • 1 ounce of mint syrup – recipe below
  • 1 ounce of lime juice
  • 2.25 cups of ice

How to make Frohito cocktail:

First make the mint syrup and chill couple of glasses.  To make mint syrup, you need a cup of mint leaves, tightly packed plus three ounce of simple syrup.  Simple syrup is 1 part water and one part sugar.

To prepare the mint syrup, pour water into a small saucepan till it’s half full.  Boil it in high heat.  Put the mint leaves and blanch for about five seconds until wilted and bright green. Strain it and pour into a blender with syrup.  Blend it till smooth and strain the content through a fine mesh sieve, pressing to take out all the liquid.  Put it in refrigerator before using it.

Now that you’ve made the mint syrup, add 1/4 ounce of it into each chilled glass and set aside.  Pour the rum and lime juice into the blender with the ice.  Blend well till it’s smooth.  Pour the drink into each glass and top each of them with another 1/4 ounce of syrup.  To garnish, you can use mint.
