Head of Steam


Mix up Irish whiskey, sherry and vermouth and you get Head of Steam,  a modern classic cocktail that is strong.  This particular recipe is by Pamela Wiznitzer and she uses very specific ingredients to make this cocktail.






  • 1.5 ounce of Irish Whiskey – Redbreast 12 year old is recommended
  • 1 ounce Noilly Prat Ambre Vermouth
  • 1/2 ounce of Pedro Ximenez sherry
  • four dashes of Bittermens Xocolatl Mole Bitters
  • four dashes of Dead Rabbit Orinoco Bitters

How to prepare Head of Steam cocktail:

Chill a cocktail glass and set aside.  Pour all the ingredients into a mixing glass filled with ice.  Stir well and strain into the chilled glass.  Twist a piece of orange peel over the drink and serve.  You can also pour orange oil on top of the drink instead of twisting orange peel.

There are recipes with different Irish whiskey brands, or Fernet Branca and Branca Mente instead of vermouth or sherry.  There are recipes with different types of bitters.  You can also serve this drink on the rocks instead of neat/up.
